The name Molay pays tribute to Jacques de Molay, the last Grand Master of the Knights Templar β officially known as Pauperes commilitones Christi Templique Salomonici (the Poor Fellow-Soldiers of Christ and of the Temple of Solomon).
He was betrayed by Pope Clement and King Philip of France in the 14th century and executed in Paris.
His legacy endures as a symbol of loyalty, sacrifice and silent defiance β and now, as inspiration for this extraordinary gin.
